Paleo Banana Bread Recipe

This is a recipe for soft and moist Paleo, Gluten Free, Vegetarian Banana Bread that will melt in your mouth. If your home is anything like ours, this bread will disappear so fast your bananas won’t ripen fast enough to make more.

My fiancé  likes to eat this treat for breakfast before heading out for a long laborious day at work. We also like to eat this as a healthy option for a sweet treat.

Try your egg substitutes to make this recipe Vegan (although I have not yet tested them myself).

As long as your bananas are ripened and eggs at room temperature, the prep time is only 10 minutes since everything goes right in your blender (we use a Ninja).

Ingredients:

    • 3 large ripe bananas, mashed
    • 2 eggs (let warm to room temperature for a lighter texture)
    • 1 teaspoon pure vanilla extract
    • 3 tablespoons pure maple syrup
    • 2 cups almond meal/flour
    • 1 tablespoon baking powder
    • ÂĽ teaspoon salt

*Can substitute the Cinnamon Bark Vitality essential oil for 2 teaspoons of ground cinnamon.

**Can substitute the Nutmeg Vitality essential oil for 1/4 teaspoon of ground nutmeg.

Directions:

      1. Preheat the oven to 350 degrees Fahrenheit.
      1. Lightly oil a loaf pan.
      1. Add all of the ingredients (except optional walnuts or Lily’s Sweets baking chips) to a blender and blend until combined.
      1. Pour banana bread batter into the prepared loaf pan and spread the batter evenly.
      1. Sprinkle walnuts or Lily’s Sweets baking chips to top (optional).
      1. Bake for 40 to 50 minutes, until bread tests clean.
      1. Allow bread to cool for 30 minutes.
      1. Run a knife along the edges between the bread and the baking pan in order to release the bread from the pan.
    1. Cut thick slices of bread and enjoy!
